- Preheat the oven to 180°C.
- Boil the quail eggs for 2-3 minutes and peel them.
- In a bowl, mix ground pork sausage meat with chopped parsley, salt, and pepper.
- Take a small handful of the mixture and flatten it out in your hand.
- Place a quail egg in the center and wrap the meat around it, shaping it into a ball.
- Repeat with the remaining quail eggs.
- Roll the meatballs in flour, dip them in beaten egg, and coat them in breadcrumbs.
- Place the Scotch quail eggs on a baking sheet and bake for 20-25 minutes until golden brown.
